Ceylon Cardamom is one of the world's very ancient spices. Green Cardamoms are the sun-dried fruits of plants of the Eletarria genus of the ginger family. The fruits are harvested while immature and dried in the sun to preserve their green color. Green cardamoms are warm and eucalyptine with camphorous and lemony undertones. Cardamom ground has an intense, pungent, sweet flavor and can be used in curry blends, bread recipes, or as a coffee flavoring.
