Ceylon Green Cardamom is one of the world's very ancient spices. Green Cardamoms are the sun-dried fruits of plants of the Eletarria genus of the ginger family. The fruits are harvested while immature and dried in the sun to preserve their green color. Green cardamoms are warm and eucalyptine with camphorous and lemony undertones. The pods can be used whole or split, the seeds can be extracted and ground before adding to dishes for a stronger flavor. Some recipes also call for the seeds to be roasted before being ground. Keep the pods whole until use.
